Mom's Chicken Soup as Immune Booster
Alas, flu season is here, and humans everywhere are suffering aches and
sniffles.
While it's no news by now to stick to the basics -- proper food, adequate
rest, and regular exercise -- there's even more you can do to boost your immune
system.
Start with the below recipe, cooked up by the Co-op's favorite chef, Eric
Bell.
Ginger Chicken Soup Packed with Immune Boosters!
It turns out that hot, steamy bowl of mom's chicken soup isn’t just good
for the soul. It’s full of good things that can
support your immune system, too.
The active constituents in chicken soup directly affect neutraphils, a type
of white blood cell that fights infection thus reducing inflammation and upper
respiratory irritation.
Eric's Ginger Chicken Soup recipe packs additional antioxidant,
anti-inflammatory and digestive benefits. So fair members, take out your caldron
and get cooking!
Eric's Ginger Chicken Soup
-
1.5-2 lbs. Chicken Pieces
provides good source of zinc
-
1 qt. Chicken Broth
also provides a good source of zinc
-
3 Stalks of Lemongrass, cut in 1”
pieces supports digestion and detoxification by inducing mild sweating
-
3 Kaffir Lime Leaves
provides antioxidant activity and good source of beta carotene
-
Cilantro, fresh, on the stem, with
whole leaves, served on the side to add to soup
offers antioxidant value
-
Thai Basil fresh, served on the side
provides antioxidant, digestive, sedative, anti-fungal, antibacterial,
and anti-inflammatory benefits
-
2 Jalapenos, or other fresh chili,
slice and serve with soup according to taste
releases “feel good” endorphins, provides vitamin C & beta-carotene,
helps break up congestion, and increases metabolism

Lime Wedges, serve on side with soup & add to
taste contains bioflavonoids

3 tablespoons Bamboo Shoots
contains B vitamins, vitamin C, and protease which helps digest protein

2-3 tablespoons Fish Sauce (also called
nam pla, or nuc mon)
contains amino acids & peptides

2 tablespoons Shallots, or onions
contains quercetin, an antioxidant and ...

1 tablespoon Fresh Garlic, minced
contains allicin, an immune system booster with antibacterial properties
-
1 tablespoon Fresh Ginger, minced
possesses anti-inflammatory, antiviral, antiseptic, and antioxidant
properties, also supports digestion

1 tablespoon Fresh Galangal, minced
provides anti-inflammatory activity, and supports digestion by relieving
bloating, gas, & constipation
Directions:
1. In a medium stockpot, sauté the garlic, ginger, galangal and shallots in a
little oil.
2. Add other ingredients (chicken last) with the exception of chilies, lime
wedges and cilantro.
3. Serve when chicken is done, in bowls accompanied with brown rice, chilies,
lime wedges and cilantro on the side.

Basic tips to help stay healthy this season
You've heard them before, but listen up once more as these tips really do
make a difference in your flu season health!
Mind your germs -- Wash your hands frequently, and don’t
share cups, silverware, and other things that could spread germs.
Stay active -- Exercise, take a walk, go to the gym, anything
to make your body sweat and keep toxins moving out of your system.
Keeping yourself hydrated helps toxins flush out of your cells, too!
Watch your stress level -- Watch funny cat videos, soak in the
tub, gaze off into the distance, whatever it is for you, take time out and
enjoy!
Practice optimism -- Optimists
really are healthier, live longer, and have less stress in their lives.
